Remember the moment when the world turned upside-down in 2020? We all have our unique and personal recollections of when time stood still- that life had changed forever. We often describe these moments cinematically with friends- detailing where we were and who we were with when we had the realization.

I was at work, receiving a series of emails back-to-back, each email becoming increasingly more resolved that we were to go home and stay there for two weeks. Oh, how that changed!

Like many others, the pandemic became a period when I experimented with food in an effort to be creative and also stay safe within my own space. The trend of Dalgona coffee emerged as a way to enjoy our caffeine dependence without venturing to cafes.

Since the pandemic, this is something I do less of, especially with increasing awareness of Big Coffee’s role on the larger global stage. Even before the pandemic in 2018, Starbucks was in the spotlight for calling the police to arrest two black men at their Rittenhouse location.

Since then, they have been accused of union-busting and supporting Israel. Why support a business whose values don’t align with your own when there are plenty of non-problematic coffee shops? Furthermore, why not save a bit of money (since our country is on the brink of a financial crisis anyway) and make some coffee at home

Enter- Dalgona coffee! This frothy beverage is the perfect way to meet your caffeine needs and also satisfy your sweet tooth. Check out the recipe below and feel free to leave questions, comments, and thoughts!

Dalgona Coffee

Ingredients

  • 2 Tbsp. instant coffee

  • 2 Tbsp. sugar

  • 2 Tbsp. hot water

  • Ice

  • 1 cup milk or dairy substitute

Method

Step 1: Mix instant coffee, sugar, and piping hot water in a large mixing bowl until sugar is dissolved.

Step 2: Using whisk attachment on a mixer, whip ingredients until they form stiff peaks (about 10 minutes).

Step 3: Pour milk (or dairy substitute) over a glass of ice.

Step 4: Spoon dalgona mixture on top of the glass of iced milk and serve.
