Curried Deviled Eggs

Ingredients:

  • 6 eggs (room temp.)

  • 4 Tbsp. mayonnaise

  • 1 ½ tsp. mustard

  • ½ tsp. curry powder

  • ¼ tsp. paprika

  • ¼ tsp. coriander

  • ¼ tsp. garlic powder

  • 1/8 tsp. cayenne

  • Salt and pepper to taste

Method:

  1. Boil 6 eggs for 10 minutes.

  2. Cool in ice water for 10 minutes.

  3. Cut eggs in half and place yolks into a food processor.

  4. Add mayo, mustard, and spices and blitz until smooth (this may take a few minutes).

  5. Scoop egg  yellow mixture into the halved egg whites.

  6. Sprinkle with smoked paprika and serve chilled.

Tips:

  • If you want to get fancy, you can use an icing bag and tip to pipe the egg yellow mixture into the halved egg whites.
